First of all, I'm a total beginner at this stuff. I have Akira, and enjoyed it very much. I'm looking for big name movies or shows aimed at adult audiences. Don't give me something too advanced, otherwise I won't understand it at all.
Ghost In The Shell? Ninja Scroll? Cowboy Beebop?

I'm no expert, but:
Ninja Scroll is a must, as is Ghost in the Shell. I also remember Demon City being pretty good, if you can pick it up. What about Studio Ghibli (Spirited Away, Howl's Moving Castle) fare? Perhaps not as adult-oriented as you stipulated but by God they're good. Oh, and there's always the Dragonball movies if you can stand the 20 minute-long fights, OTT grunting and exclamations of "It can't be! He's so powerful! Gnnnnnh!!!"

Cowboy Bebop. My favorite anime series of all time. Samauri Champloo seires is a close 2nd. If you want adult content .. this is right up there.
Check out also Vampire Hunter D Blood Lust (and the first Vampire Hunter film), Grave Of The Fireflies, Steamboy, Metropolis, any movie by Studio Ghibli kicks ass (Valley of the Wind is a must see). Ghost In the Shell & Ninja Scroll flims are great. Didn't get much involved in watching their tv series. Someday down the road i'll go back to them.
Right now getting into the Death Note series. Still .. nothing can come close to the Cowboy Bebop series. Download or rent the first Session Disc 1 of Cowboy Bebop .. and see for yourself .. why i've been on the Bebop ship for so many years now. lol.
Berserk and Wolf's Rain are pretty f**king good. Both get slow in the middle due to recap episodes, but they have amazing pay-offs if you stick with them. I really liked Haibane Renmei (spelling?) as well. Totally different than the other two, but a great girlfriend-friendly-without-being-about-high-schoolers-with-big-eyes series, and quite the ending as well.

I watched maybe the last third of Steamboy when it was aired on AZN. I lol'd when I saw that Anna Paquin was the English voice for the main character.

I'm getting the two Karas movies right now: prophecy and revelation. These two are supposed to have ridiculous visuals and are currently the #1 seed on mininova.

Downloading "Afro Samurai" right now. This one is supposed to make Champloo history. Samuel L Jackson is the lead character. Other voices include Wu Tang Clan rapper, RZA, who also produced the music.

Yes. It was good. Pretty trippy (it's about dreams) but I enjoyed it quite a bit. I want to check out some other Satoshi Kon stuff (Perfect Blue, Tokyo Godfathers) soon.

Also the Rurouni Kenshin OVAs are superb. You don't really need to have watched the show (which is a little uneven) to follow them. Really beautiful animation.
