I'll lead off with a few great ones:

iFirstAid - I hope this one doesn't come in handy too often, but for a free app it is very nicely built
Shazam - Old news, I know, but this recognition software is amazing
SnapTell - Somewhat like Shazam, except that it uses image recognition and provides assloads of information

Flixster - great movie review/theater locator

i.TV - TV guide app. handy when away from home

Pandora/Last.fm/Slacker - all very good internet radio apps

Remote - awesome. allows you to control your itunes playlist on your computer through your iphone.

Google - voice activated googling

Tiger Woods - best game on iphone.

pandora (radio station)
pro darts (play cricket or the 01 games)
lets golf (better than tiger btw)
keepie uppie (tap a soccer ball as many times as you can, not lettin it touch the bottom of the screen - maybe my fav game)
wild west pinball
espn cameraman (like megatouch photo hunt with sports pics)
beer pong (wasy but fun stuff)
minesweeper
bowl lite (skee ball)
ifitness (shows different excercises for each body part, allows you to keep track of your workouts)
one tap movies (local theaters and movie times)
yahoo and cbs fantasy sports (check my fantasy teams n change lineups)

i also got one of those things where you see pennsylvania highway cameras to see how traffic is..i may pick up a police scanner..
