As Human Bass has already said, Once Upon A Time in the West is fantastic. So many good actors doing good work. Every scene is well done.
Unforgiven is often mentioned, but as they said, it's the western that defies the myths of the old west. It's great stuff.
McCabe and Mrs. Miller is good. I will say, and I was happy to hear Tarantino has also said, that the first 20 minutes was hard to get through (intelligble dialogue). But ride through it. By the end there is something that lingers. I will have to watch again myself to figure out what it is.
Wild Bunch. The first ultra violent Hollywood film that I know of. It showed the West as it really was. Brutal, violent, and unforgiving.
The Good The Bad And The Ugly What else can you say? Great stuff.
Most recently, The Assassination of Jesse James by the Coward Robert Ford. It's a long film, and may at times make you want to go to sleep. I understand. But stay with the character progression. Good stuff.
3:10 to Yuma (new version). Good entertainment. And Tombstone
I would give you older Westerns, but I don't know how well you'd take to them. The John Wayne westerns may be good stories, but they're far from the gritty realism which I love so much (Sergio Leone films aside).
OJW kind of slows down in the final act, I love the scene with Ten Bears, and I'd reckon that's the climax of the film. I've always kinda thought the final shootout anti-climactic.

what are people's opinions of No Country & There Will Be Blood, both of which seemed to get more recognition than The Assassination?
I prefer the old Technicolor westerns from the 50's and 60's. The realistic, stark, modern westerns they've put out the last 30 years leave me a bit cold. The James Stewart and Anthony Mann westerns are really good. Anything by John Ford. The Searchers really is the best western ever.

How the West Was Won
I'm half convinced that James Stewart is the greatest actor ever.
The Man Who Shot Liberty Vallance is probably my favorite. The Searchers, Shane, and High Noon are kind of over-exposed but still good. Will Penny is good. At this point I'm not sure if I love Butch Cassidy or hate it. A Fistfull of Dollars is Eastwood's Best, the ending is classic. High Plains Drifter is different in a good way. Brando's three westerns(four if you count Zapata) are all interesting. Let's don't forget The Gunfighter. Monte Walsh is good. Little Big Man is a bit over the top with the revisionism but still enjoyable.
