Ok, so I have a bunch of frozen ground bison meat in my freezer and I thought I'd put some on a pizza. What I'll do is cook up a pound of it in a frying pan like I was making it for tacos and then put it on the pizza and cook it all together in the oven.

This should be a good experiment, but I have to decide A) what seasonings to use in the meat, and B) what else to put on the pizza.

It seems like a waste of good buffalo meat to put it on a pizza.

Don't listen to Scott, Pete. I went through the surplus "problem" with venison all last winter and came up with some great stuff. I can't believe I didn't think to use any on a pizza. You should put a little olive oil and oregano on that meat and see what sticks.

some farmer out there needs to start raising fat buffalo. the leaner the meat the least taste it has..imo

I decided to make a bolognese out of the buffalo meat to put on the pizza tomorrow. It's simmering/reducing on my stove right now and smells amazing.
