The thing that I like about kale is that it's virtually impossible to overcook. It can withstand the high heat of a stir-fry, no problem. I do not, however, enjoy those kale chips at Trader Joe's. Not one bit.

Pick some up tonight, Pete. It's a hearty winter vegetable.

Throw in a few almonds or peanuts while cooking it, then serve it alongside a nicely seasoned chicken breast. Quick, easy, healthy, and delicious.

It's no secret that prepping is my favorite part of cooking, and this is especially true with kale. There's just something immensely satisfying about ripping the leaf from the kale plant's sturdy stem.
