Nice, I'm going to make this. I like some suggestions about adding pineapple juice too. Have you tried that?

I love my crock pot. Its a standby for chicken tortilla soup, chili, and taco soup.

I have not tried the pineapple juice. Let me know if you try it. I love this kalua pig recipe, I probably make it once every couple of months. I have added cabbage in there on occasion, but that's just a personal preference.

It's really great if you have a rice cooker and can whip up some quick sticky white rice to go with it.



Well, I made this pig this weekend. It came out fall off the bone, buttery good. I cooked it with a can of crushed pineapples and a few splashes of soy sauce. I will definitely be adding this to the rotation. Even my 13 month old daughter gave it two thumbs up. Thanks for the great idea. Such a mindless recipe, its amazing how well this turns out with so few ingredients.

ruddo, do you cut some of the fat out during cooking? my only complaint is it was a bit too fatty for my liking.

yeah, if you use a pork butt it's good to at least trim that layer of fat that is on one side. I've also done this recipe with a pork shoulder, which didn't seem to have as much fat on it and turned out just as good.

I wouldn't say superior, no. Depending on your tastes and schedule, it offers a nice change of pace from the traditional routine.

Also, yesterday was the first time we tried our hand at homemade tomato sauce and it turned out pretty well. This had nothing to do with the crock pot, so it may have skewed the overall outcome. And including about half a pound of spicy pork sausage was an excellent decision.

since our apartment's so small, i think i'll be using the crock pot a lot over the summer in lieu of the oven... unless i grill every meal.

Beef Barbacoa

Ingredients

3 pound tri-tip or chuck roast, some fat trimmed off (leave some for flavor) Cut into about 4 or 5 large pieces
1/2 a yellow onion quartered
2 large garlic cloves cut in quarters
1 jalapeno, chopped- stem and seeds removed if you don't want too spicy
2 tbs of chili powder
1/2 tsp of garlic powder
1/4 tsp onion powder
1/2 tsp pepper
salt to taste, I add about 1 1/2 tsp salt
1-2 cups of water

Place all ingredients in slow cooker, and add enough water. Set on low and let cook for about 7-8 hours until very moist and shreds easily. There should be enough liquid to keep it moist. Or cook on high for about 4-5 hours. Enjoy.
