This is exactly right. It's not too spicy, it tastes really good and you can put it on a lot of different stuff. I'm a fan.

Don't get me wrong, I love super spicy stuff, and being Colombian I have a pretty high tolerance for it, but intensely-spicy doesn't go with everything.

why do you think i got you wrong? i got you fucking right! the Sriracha scores a 2,200 on the Scoville scale which is a bit lower than the original Tabasco sauce that everyone knows. i usually don't bother with hot sauces lower than Cholula's (3,600 Scoville) and the best ones i've tasted that would be fair to mention are way over 10,000 Scoville units. there's just something about Sriracha that seems to fit most people's taste and i like to share my taste for hot food so this is usually the sauce i reach for when friends come over. i'll put it right in the wok and watch them react. usually they just think it's hot but not botheringly hot. if i want my extra sweat i'll get my El Yucateco's Mayan Recipe bottle or dried scotch bonnets.

I find Sriracha to be the perfect heat for most of my hot sauce usages. When it gets much hotter, I start enjoying my food less.

yeah i get that. the trick is to not put too much extra-hot sauce in a meal. just a few drops can do. some very hot sauces are just capsaicin with not much taste while some others are still very tasty. the scotch bonnet, for instance, is a tasteful yet crazily hot pepper. i've also had a few rrrreally mango sauces that were excellent when used parsimonously.
one thing that's often overlooked is that the "pain" you feel when consuming high-capsaicin meals is that it gives you an endorphin rush. good times
