I'm in love with chipolte and looked up the recipe for how they make their chicken. Hopefully it will turn out alright.

deep fried mac and cheese wedges are quite good as is regualr mac n cheese with Lobster in it

I've never made this personally, but it looks great. Found a recipe for macaroni ham casserole in a cookbook I own and modified it to include potatoes instead of ham and chicken.

2 cups cooked elbow macaroni
2 1/2 cups diced, cooked potatoes
1 cup shredded swiss cheese
1/4 cups sliced green onions
1/2 cup finely chopped onions
8 ounces sour cream
3/4 cup milk
1/4 teaspoon dry mustard
1/4 teaspoon pepper
1/4 cup crushed potato chips

Basically you mix the first five ingredients, then combine the rest and add it to the mixture. Spoon into a 2 quart baking dish and sprinkle with the crushed chips. Bake at 350 for about 25 minutes, until lightly browned. Serves six.

that seems too starch heavy with the pasta and potatoes

Well we just got our hands on some butternut squash. Pretty sure we'll be resurrecting this tasty little number.

Corn/Butternut Squash Chowder

2 tablespoons vegetable oil
1 1/2 pounds butternut squash, peeled, seeded, and cut into 1-inch chunks (about 5 cups)
1 medium onion, chopped
10 ounces frozen corn, thawed
1 1/2 teaspoons curry powder
S&P
2 cans (14.5 ounces each) vegetable or chicken broth
1/2 cup cream

In a large pot, heat oil over medium-high. Add squash and onion. Cook until onion is soft, about 6 minutes. Add corn and curry powder; cook until curry is fragrant, about 2 minutes. Season with salt and pepper. Add broth and simmer until squash is tender, about 25 minutes. In a blender, blend half the soup until smooth. Return to pot and stir in cream; heat through over medium-low (do not boil).

This is excellent.

mostly cheddar... or whatever else is lying around the fridge...but real american cheese works the best...the ultimate cheese to use is the "commodity cheese" from the government
