I just used red potatoes, better flavor. I shaved off the skin but left the tops on for a bit of color.

If anyone ever has Bison French Onion chip dip available to them (I've only seen it in Western New York, though and there is no substitute for it) just mix a whole bunch of this with some red smashed potatoes with some milk to fluff it. Amazing.

A little bit of Pesto in mashed potatoes is really nice I think. My other half once served up pesto mash with lamb chops and a rich gravy, it was really good. :thumbsup:
