If you really love Galas, I would ask you to try a Jazz. They are a Gala and Braeburn hybrid. And they are generally pretty cheap too. Still not a favorite of mine, but I think they are a little crisper and flavorful than Galas.

See, I agree with the texture thing and the galas I get are always super crisp. Can't stand mushy apples like McIntosh. I like pink ladys flavor and texture wise but they're just too big. I do enjoy the honeycrisp and Jonah gold ones I've had but they're always a little more expensive.
So yeah. Fucking apples, how do they work?

It's been my experience that foods that you use to make other foods with are seldom as good on their own as they are in recipes. The tartness of a granny smith is the perfect element to a well-balanced apple pie, but that apple makes me pucker too much when enjoyed by the slice.

My favorite "dessert" is actually apples and peanut butter. Organic apples with peanut butter is even better. That with a nice cup of coffee is fucking crazy awesome.

If you haven't had baked apples before, you should try them. They kinda look gross, but taste nice. For me, it's a good Thanksgivingish treat. I skip the raisins. http://www.simplyrecipes.com/recipes/baked_apples/
