I am officially addicted to this stuff. Growing up I've always associated beef jerky with slim jims, and lately I've been trying better stuff and I can't get enough of it.
right now, this is my favorite:
what does everyone else think about dehydrated smoked beef?

about ever 18 months my brother gets on a kick and makes his own with a dehydrater. the smell it produces may be the worst smell on the face of the planet and could easily take the place of mustard gas as choice of the genocidial maniacs of the world

When I'm in Colorado, there's this little jerky stand I like to frequent that has pretty much every animal on the face of the earth jerkied. They have beef, deer, elk, turkey, buffalo, alligator, and can't remember what else, but there were a few more. Alligator jerky is delicious. The only one I didn't particularly care for was the buffalo, which was a little tough.
