falling off the bone is great but overrated. perfection is the rib meat sticking to the bone just a bit.

Bone in ribeyes on the grill tonight along with beef short rib that has been marinating for 24 hours in red wine with garlic and onions..hunks of buffalo mozzarella on top of cold tomato slices with sweet corn on the side..beer will be flowing along with some bordeaux and whisky..ice cream to follow with in season berry assortment.

i had dinner at a bbq place that offered a carolina vinegar based sauce, a kc mustard based sauce, and a chicago molasses based sauce. they're all great, but carolina remains my favorite.

Did ribs and 2 pounds of Brisket ends. The ribs - unfucking believable. Gonna be a task getting them off the rib rack in one piece. Dunno how the Brisket is gonna be. I slow cooked them for 6 hours, got them almost up to 180, and they are now resting. Seemed pretty tender. Not sure on my rub or the sauce I made for them though.
