I thought this was a South Carolina style?

East NC/SC = Vinegar
West NC = More traditional tomato based
SC = Mustard based.

hmm, it certainly could be. kc is the crossroads of all bbq, so while a mustard based sauce exists there, it could certainly have originated elsewhere.

Oh, I'm with you by the way re: Carolina being your favorite. The "low country" stuff (eastern NC / SC) is my favorite too. Damn, now I want some and there aren't really any places around these parts that have it.

Smoque on Pulaski between Addison and Irving Park is fantastic. Excellent brisket and St. Louis style ribs.
