gonna keep is easy tonight and grill some chicago style dogs..using a jalepeno sausage and will top them with tomoato, sliced pickle, celery salt and mustard on a seeded potato bun

What are y'alls thoughts on wood chips?
Me and the Mrs. moved and finally have outdoor space. One of the first things I did was buy a Weber Charcoal Grill, and got a few bags of wood chips to go along with it.
Prior to this grill, I have pretty much only used gas grills, so the charcoal and wood chip thing is pretty new for me. I've been experimenting with Hickory, Apply and Cherry wood.
Do any of you use wood chips, and if so, what do you like best? Basically folks, I want you to rank the wood chips. Thanks.

I usually just use the gas grill because of time concerns, but when I do use the charcoal grill, I always add mesquite chips.

For what it's worth, I never use chips, but only use chunks. Some chips can create a run-away smoke effect that can be hard to control. Chunks are denser, burn/smoke slower, and are easier to remove. Basically, they're less maintenance.
Also, you have to be careful about which ones you use -- some leave a very musky or smokey aftertaste that really permeates the food (in a bad way), particularly delicate food.

That link is interesting and a great reference. Interesting about the chunks...I never even considered them. Once I run out of chips, I'll get chucks.
So far, I think I like the Apple Wood best, but both Hickory and Cherry are good too. Cherry was great with Chicken, and Apple was really good with Pork Chops.
Hickory goes well with pork too...gives everything that Carolina BBQ flavor.
Mesquite is next on my list (chunks), and I'm curious about Pecan and some of those others. Thanks again!

I'm going to attempt my first beer can chicken this saturday..I have a giant ribeye incase things go wrong..if anyone has done this I'd appreciate the feedback

Mine was tasty as hell. I used this recipe: http://www.foodnetwork.com/recipes/the- ... index.html It took a little longer than the recipe says because the grill didn't close completely. I used tin foil to wrap around the opening.

I've used onions, pineapple (I know, it's a fruit), mushrooms, peppers (bell, jalepeno, habenero) and zucchini. Haven't ventured much past those though.
