They are mighty mighty

They add vitamins and lots o' flavor

except for those green ones.

Bleh.

Both those juicy just-cut or just-flanked red ones? I eat them like apple slices. NYOM.

However, mind you, granted, this is one vegetable that you DO want to go organic on.
I said organic.
Because they hold pathenogenicidespests like the dickens

Personal opinion, SP. After having peppers with higher concentrations of capsaicin in them, the bell peppers are worthless. "Once you go black, you never go back."

One of the easiest dishes to make. The basic template is browned meat/cooked rice/tomato paste all mixed together and stuffed inside a hollowed out pepper, then baked until the pepper is nice and tender.

After you have that simple technique down, you can tweak it many different ways. I've seldom made the same recipe twice. I've even mixed in pepperonis with the ground meat and rice before. Playing around with the stuffed bell pepper recipe is actually the thing that helped me discover how much I like cooking.

That's it. I normally top the opening with a slice of cheese or some sort of sauce, mostly for presentation.

:? Capsaicin is what makes peppers spicy. No one eats green bell peppers for spiciness.
