do you want to edit anything at all, or just make digital files out of the recordings from your 8 track?
i personally use GoldWave, low use of resources and quite easy to use.

I record in from a turntable all the time with MusicMatch, and I've always gotten good results. I only use it because it came with a computer I bought many years ago. I'm sure better programs exist.

if you just want a simple recording that you don't plan to edit, then goldwave will work just fine. if you want a more robust program i'd recommend getting Adobe Audition (aka Cool Edit Pro).
