I never really clicked with the music of Beck and I feel guilty about it. I do like that song 'Deborah' and 'Sexx Laws' but that's about it. What am I missing?

Sea Change is boring as fuck. I would go with Mutations or Guero instead.

Yeah. Get Odelay, Sea Change, Guero, and Mutations. Listen to them lots.

Then get Mellow Gold, Midnite Vultures, and The Information...after that you're set.

I would say that he is more adept than his contemporaries musically as well as lyrically. Keep in mind that many of his biggest hits from back in the day are based around familiar samples - most of his music isn't like that.
