Can anyone recommend some good bands that fall into this catogory? I am looking for Sonic Youth SYR type stuff. Also, any kind of chaotic / experimental jazz would be great.

First thing that I thought of was "Loveless" by My Bloody Valentine. I know some people think it is overrated, but it might be something you really might enjoy. I like Wilco "Yankee Hotel Foxtrot" for this stuff too, though not as "noise" as a lot of other bands I'm sure.

Just to forwarn you, that Jesu is very metal at parts and can be kinda jarring, and some of the songs from Laughing Stock take some getting used to, but both are great once you get used to them.

Lwt's see, I really like Boris' Akuma No Uta, but it isn't really all that experimental for the most of it. It is just really dang good.
Hella's Bitches Ain't Shit But Good People is really noisy melodic rock, and I guess if you want to listen to the more hardocre side of noise throw in some Lightning Bolt or the Locust.
It is always essential to note that what some people consider experimental is not really considered experimental by others, possibly more so than any other genre. While there are definately experimental elements to albums like Yankee Hotel Foxtrot, especially in the context of a rock album, it is not really what I would consider experimental music, much like Jesu (although their self-title IS awesome). But I digress. It really isn't that big of a deal and I'll not really be "that guy" going and saying 'that isn't experimental get out of here' (to a reasonable extent).
To continue, a really good noise album is by a band called Maladror, which is basically a collaboration between Merzbow and Mike Patton. The album is called She, and is an interesting listen. A lot of Boris' older material is really droney and noise heavy, like Absolutego. Itkind of is a cross between Drone music and Noise, if you will, but most of the influence comes from the drone half.
Wolf Eyes makes some good noise music that is more on the frightening ambient side of things. I have .Burned Mind and Dread and like them. They have a ridiculous amount of materil out there as well
I'll post more as I think of it. I really need to get more Merzbow. If anyone can give me a starting place, I'd love it. His catalogue is immense

I'm going to 3rd the opinions of Echoes and TS808. Get Wolf Eyes - Burned mind. That was one of the first things that came to mind when I thought of experimental noise. Listening to this album is an exercise.

I'm still not sure if King was entirely serious in the linked thread, but what I've listened to on that list has been great too.
If you're interested in more "extreme" types of noise, I can recommend 1930 by Merzbow, which is the only full album I've got in the genre, or you can search Soulseek for a compilation called "Extreme Music From Japan". I've still got to digest some of that stuff though, it's really quite... abrasive.

You're asking for a huge range of music with "experimental" and "chaotic", and that is reflected in a really fucking weird blend of suggestions so far, none of which sound anything alike, or anything like Sonic Youth (in my opinion).
Here is a small continuum of bands. These bands go in order, starting pretty close to the Sonic Youth sound and getting more experimental and jazzy but less rock towards the bottom.
Slint - heavily influenced by Sonic Youth, noise/post/experimental rock band
Cul de Sac - very experimental, and noisy, post-rock band
Mercury Rev - these guys define chaotic rock
Spacemen 3 - one of the first "modern" psychedelic rock bands
Spiritualized - experimental pop/rock at its finest
Stereolab - one of my favorites; quite influencial experimental pop group with quite a bit of jazz influence
Tortoise - extremely jazzy, experimental/electronic post-rock group

I was contemplating Spiritualized too, good job. There are parts of Pure Phase and Ladies and Gentlemen We Are Floating In Space that could definitely meet your demands.
