Well if I went into a record store asking the clerk to help me find some ambient music or some IDM, and he came back with an album full of dubstep, I'd be pretty annoyed.

I must admit I get a little confused as well. I like some of the French techno bands (M83 mostly) and don't know exactly what they are classified as, particularly since a lot of these bands get played on "college" radio over here. I almost want to call them alt-techno or something stupid.

Ambient:
Intelligent Dance Music (IDM):
Dubstep:
In my mind, the type of beats and rhythms distinguish the three, but there is a lot of subtle things going on here that a serious electronic fan like flavdave could probably help you out with much better than I could.
