Rubin definately wins just for how he got johnny cash out of his funk in the 90s and producing the best stuff of his career. of course, he's produced lots of classics as well like blood sugar sex magik and deloused in the comatorium
Plenty of good guys have been mentioned so far, but I would put the spotlight on the guy who produced Turn On The Bright Lights. The sound on that record is like my soulmate or something.
I definitely agree on Albini, O'Brien, Rubin and Moulder, and I would also add Nigel Godrich.
