I'm not sure how exactly to classify it, but I'm really into that whole scene lately. Ryan Adams, Sun Kil Moon, Songs:Ohia and others....that kind of thing. What are some others I should be checking out?

I like him. I wouldn't consider him to be alt country or folk rock though.

He has a very similar sound to Ryan Adams, in addition to that being a wrong opinion.

Alexi Murdoch - Time Without Consequence (Heard some song on a nissan commercial loL) - Decent album.
Alberta Cross
Tallest Man on Earth (sort of fits)
The Band would be my ultimate recommendation.

Alt-country has slowly become my favorite my genre/sub-genre. I'll just list some bands that I figure fall in the category because it's not an exact science. I guess it can be a little more general since you included "folk rock." Here's a few things to consider, though some have already been listed. Some are more rock, some more country, some more folk, or even bluegrass for that matter, but oh well. I'm sure you've heard of several of these anyway.

Drive-By Truckers
Patterson Hood
Jason Isbell
Lucero
Centro-matic
South San Gabriel
Glossary
Slobberbone
The Drams
Two Cow Garage
Drag the River
William Elliott Whitmore
Ray Lamontagne
Rocky Votolato
Steve Earle
The Avett Brothers
The Everybodyfields
The Fox Hunt
The Broken West
The Felice Brothers
Chris Knight
The Tallest Man On Earth
Horse Feathers
The National Lights
Old 97's
The Thrills
