Towards the end, when Han is going to get frozen, why does Vader stop Fett from shooting Chewie?

Because there is still good in him. It's never explained but it's implied in that and a few other moments in ROTJ.

What are the other moments from ROTJ, aside from the obvious one at the end?

actually a bigger question is, Luke lands on Dagobah, big jungle planet..and lands, Crashlands! exactly where Yoda lives...how'd that happen? the obvious answer is the force lead him there and i'm a fan but i don't buy it either.

well the parts in ROTJ are when he doesn't kill Luke or really let go on him in the lightsaber fight at the end, but he redeems himself by killing the Emperor after he attacks Luke. Much more obvious I guess.

Luke to Leia: "There is still good in him, I've felt it"

Luke to Vader: "I feel the good in you ... the conflict."

Plus Luke reminds Vader of who he was. Luke's a result of a better time for Anakin, when he was in love, a hero, and Luke's specific desire to not kill Vader but to save him plays a big part in Anakin rediscovering his compassion.

I've never done that, but if i win the lottery i am building a full size version, keeping the cockpit exactly as it is in the movies but rendering the rest of the interior as a three bedroom apartment.
