I like my soft cheeses. I had a brief love for epoisses before some fool put it in the fridge and it came out covered in what looked like fly eggs. So i can't eat that anymore.
I also don't like these cheeses that have fruit inside.

Jarlsberg is my favorite. Really like edam as well, and gouda is great on sandwiches.

Also, brie is very good baked.

24 or 32 months is the real deal. The same goes for Grana Padano. It also varies greatly from one producer to the other. I'm buying it only in Italy (it's less than a half hour drive from me). The kind they export tends to be very bland.
