The key to a good po-boy is without a doubt the bread. Also, if you aren't getting it dressed with tomato, lettuce and mayo, you're doing it wrong.

Sounds basic, but the quality of ingredients take it from zero to hero (pun unintended).

I had a fried shrimp, fried oyster, and roast beef po boy in New Orleans when I got married in May. Getting the roast beef was a huge mistake.
