There is this excellent recipie for a cheesy seafood appitizer that rocks and uses a ton of hot sauce in it...

season wet raw wings with both seasonings, drop in hot oil fry till their dun... douse with hot sauce and butter... or eat plain...

Lost Woods Hot Sauce, made by this little company in southern Maine. I discovered it in a restaurant in Portland and have been hooked on it ever since. It's not overpoweringly hot, and very flavourful.
