I'd probably start with a beef carpaccio w/ capers, nuts and arugula. The main would be a wild boar ragu. And probably a nice cheese and fruit plate for dessert.

Yeah, but where else you gonna put HB? Way too intense for a starter. Too rich and filling for the main course.
