Feel free to express your own desires and ideas about owning a local establishment some day.

I thought this out. When I get the money, and I will some day, I'm going to set up my own private establishment in Door County, Wisconsin. If you've ever stepped foot in DC, Wisconsin, you'll know how beautiful it is there.

My establishment will be on the lake. And it will be called "Only at Patsy's" after one of my favorite female vocalists, Patsy Cline. These things are key:

*My establishment will play mainly music from the 1950s, and some golden oldies stretching into the 1960s. One Patsy Cline song will be played every hour.

*I want my establishment to feel as if it came straight out of a David Lynch film, hence 1950s music. The ambiance will feel much like a Lynch film. Very dark under lamp light, but there will be bright colors placed here and there. I want it to be very low key.

*I will have fish tanks.

I should have said that this is more of a bar setting than sit down food. But I'll do the best I can.

You know a real nice scene would be for me to write down an order of salmon then walk over to a fish tank and with my bare hands (or bare teeth) grab a nice orange, flopping salmon and bring it back to grill up. I think my public would find that amusing.

WI restuarant and bars are laid back casual... even if they call it "fine dining" or "supper club"
most "restaurants" are TAVERNS with food and drink...

interirior decor usually consists of a woodsy theme with some Packer Memorabila hanging all around the bar ... (and Bears shoved up in corner)

people up there like down home farmer style cooking... being a little on the chunky side keeps them warm for the long winters... no tofu and sunflower seeds there, for sure!
keeping it "fresh" and "local" is best appeals to the locals and tourists... breads, jams, burgers... Americana at its finest (or sometimes worst noted:Wisconsins idea of Pizza is a saltine cracker with some ketchup on it)
Keep the menu simple for simple local folk and simple for the prentious snobs who come and leave their "mental garbage" in the woods...

I love cheese shops. I get really excited. Sexually.

Our town could use (i don't know what you call it) like an American Diner where you can buy decent fast food like meaty ribs or decent burgers. Something that's hand cooked and has lots of flavour but appeals to people that want a night out on the town.

sounds like you two just might be canidates for the progressive state of Wisconsin...

there used to be this fantastic place you used to walk in their coolers with theese HUGE wheels and blocks of cheese... all of them handmade... anyway...
