i had dinner at a bbq place that offered a carolina vinegar based sauce, a kc mustard based sauce, and a chicago molasses based sauce. they're all great, but carolina remains my favorite.

I thought this was a South Carolina style?

East NC/SC = Vinegar
West NC = More traditional tomato based
SC = Mustard based.

hmm, it certainly could be. kc is the crossroads of all bbq, so while a mustard based sauce exists there, it could certainly have originated elsewhere.

Oh, I'm with you by the way re: Carolina being your favorite. The "low country" stuff (eastern NC / SC) is my favorite too. Damn, now I want some and there aren't really any places around these parts that have it.

I'm driving through Kansas City again (on the way to Lawrence, where I'm dropping my sister off for college). Time for another BBQ stop. :thumbsup:

what's a good place to get bbq in chicago, bro? is it cool if i hit up the ghetto in the daylight hours?

Not many places. But Honky Tonk in Pilsen is cool, even if their brisket is just OK.

Smoque on Pulaski between Addison and Irving Park is fantastic. Excellent brisket and St. Louis style ribs.
