enjoying everything a crisp gala has going for it doesn't preclude enjoying other varieties even more, conclusion reachers
To be fair, they are pretty much available all year. They just have no "pop" to me, just a bland mellow taste, which is why they are good for sauce.
a few years ago, the local whole foods carried pinata apples for a few weeks, and they quickly ascended my list of apple favorites. i have been unable to find them since.
This apple variety was bought and patented by a Washington company. They go by a different name now. Google shows: Pinova or Sonata

Gala are the ESB's of apples, perfectly balanced and just right. And as a noted food snob even I find apple snobbing to be a bit much.
And why would apples be any different then any other food or drink exactly? I love apples. Just like others love beer or wine. Galas are the Budweiser of apples.

Funny thing was my wife picked out some galas to try out. I was so close to saying, "don't bother with those gutter apples." But, I couldn't remember what they tasted like so I let her buy some. Tried one later, and yeah, they are a layman's apple. Thumbs down.

Like I said earlier in this thread, they are good for sauces and cooking in general. Fuji is kinda as low as I go these days. And I still like an occasional Granny Smith, which, of course, are also good for cooking.

I'm a grannysmith man myself.
I like 'em too. Unfortunately, green apple choices in the U.S. are really limited. I have found it's basically just Granny Smith and Mutsu. I wouldn't really count the sometimes "greenish" Golden Delicious. The skin on Granny Smiths can be tough however and I find that it's one of the few that I almost always use the corer on. That initial sour tang can't be beat!
