I have a couple questions about the show, fairly detailed questions though.
I'm trying to find a couple episodes that deal with blacks, Indians, Asians, or any minority. Any suggestions? I'm searching episode guides right now but it's taking forever.

Check out "Here Comes the Neighborhood" from Season 5 which basically deals with blacks. If you are looking for a show that simply makes fun of minorities rather than as a topic, any episode will probably work, I mean that was pretty obvious

What I'm trying to do is find some examples of stereotypes being dealt with comedically, rather than head-on in some serious manner, and I knew South Park would have some. if you have any other ideas, let me know.
That Method Man appearance does rock though, I'm so glad him and Morello got a chance to work together.

Goobacks from Season 8 is the first one that comes to mind.
I know there's a racial joke in the Toilet Paper episode from Season 7 as well:
Officer Barbrady: "Mr. Bell, do you remember anyone suspicious buying toilet paper in the last few days?"
Mr. Bell: "Suspicious like how?"
Officer Barbrady: "Well, like someone who was black, or Mexican, or middle eastern."
Mr. Bell: "No, the only Mexican guy I recall bought toaster tarts and chips, and we don't allow middle eastern people in the store."
The dodgeball one was great... where they went to China to play in the dodgeball finals. And the Chinese announcers were making fun of Americans and their big eyes.

"Here Comes the Neighborhood" and the Goobacks one, I don't know what it's called, are the first two that come to mind, and are just hilarious episodes as well.

The Michael Jackson one is good too. It shows how cops are always trying to frame rich blacks for crimes. I think it's called "Mr Jefferson come to town."

Sorry for the double post but i just remembered the episode where Kyle's cousin comes to town and he is the epitomy of the Jewish stereotype. Kyle says he'll pay Cartman money if he doesn't rip on his cousin and Cartman does well until he cant resist:
