yeah, drain, and wrap in blankets to soak up the moisture. I usually cut it into cubes, but slabs might work good too, or possiblly strips. You just need to be sure to heat it up good and get everything covered with plenty of sauce. sometimes I also add some chopped garlic adn other spices.
