Rain Dogs is my favorite record of all time. Bone Machine is up there as well.
Something scares me, though. Not counting theatre work, the last three records have been Bone Machine -> Mule Variations -> Real Gone.
I can totally see the progression there...Bone Machine is syncopated and aggressive, Mule Variations is a dirtier, gentler take on that....sort of folk music for after the apocolypse...and I can draw a clear line from some of the work there to Real Gone (though I'd never have dreamed he'd take it that far). The question is....if that's the progression we're seeing, my god, what comes next?

every single one of his albums are good. really. if you want late night, jazzy, drinking music go for any of his early albums and if you want just pure craziness go for any of his later albums.
